In 1895, in Belle Époque Paris, a popular Montmartre dance hall stood out from afar with its windmill-shaped sign and its garish red color. Frilled dresses and cocktails filled the dance floor with a thousand scents and colors. Two figures well-known to the regulars emerged: Louise “La Goulue” and Valentin “le Désossé,” the legendary couple of the Moulin Rouge, whose very free interpretation of the traditional quadrille would give birth to the famous “French cancan.”
